Description
This is the recipe of sambar which is cooked in many forms across the India and more specifically southern India. This is a combination that I like.
Ingredients
- 300 g assorted vegetables (brinjal, bottlegourd, carrot, radish)
- 1 t each of (cumin seeds, sambar powder, turmeric, salt)
- 1 T refined oil
- 75 g onion
- 100 g tomato
- 1 sli ginger
- 200 g tuar (arhar) dal
- 10 curry leaves
- 2 cinamon sticks
- 3 bay leaves
Instructions
Sambar is one of the complicated things and it has varying tastes across India. This is one version that I make and I like it. So here it goes.
- Slice the tomatos and onion
- Slice all the vegetables
- Clean and wash the dal
- Put the oil in pressure cooker and heat it
- Once the oil is hot, add cumin seeds, cinamon sticks, bay leaf, curry leaves
- Once cumin seeds turn brownish, add onion, ginger, and tomato
- Cook till tomatos are cooked, add rest of the vegetables
- Cover the cooker for half a minute and let these cook
- Add sambar powder, turmeric and salt
- Mix it well and then add tuar dal
- Mix it well and add water. Water quantity should be such that all the contents are submerged
- Close the cooker and put the weight on
- Once the pressure builds up, reduce the flame and let it cook for 20 minutes.
- After 20 minutes, let the cooker cool down.
Sambar can be served with many south indian dishes or just eaten with rice.
